在228升勃艮第橡木桶中陈酿14个月。其中34%为全新法国橡木桶，66%为使用过的法国橡木桶。

丰沛冬雨过后，料峭春寒绵延，致发芽、花期与坐果推迟近月。直至六七月间，凉雾交织仍令坐果不均、产量稍减，成熟度也参差不齐。幸而夏秋两季晴朗温和，给予清凉地块足够暖意。十月降雨频繁，及时的人工干预——选择性疏剪叶幕以增强通风与光照，让葡萄园避免了灰霉病以及其他霉菌病害的发生。

采摘纪事

2023年的采摘期来得略晚，从10月4日持续至10月26日，历时三周。采摘工作始于朝南且海拔较高的山脊地带，随后一周内，我们收获了绝大部分的黑皮诺。十月中旬有几天温度升高，将大部分的霞多丽葡萄推入了理想的采收窗口期。因没有遭遇酷暑天气，葡萄保持了出色的完整性，较长的挂果时间让果实中的酚类物质充分成熟，还保持了相对较低的酒精度。

酿造过程

葡萄经人工分拣，去梗未破皮。置于小型开口钢罐发酵，先经五日冷浸渍，第七天启动发酵程序。通过压帽与淋皮工艺来精准控制萃取的强度，并因批次定制方案。发酵温度控制在25到28度之间，浸皮约14到16天日后轻柔压榨，之后让酒液流出并完成压榨。精选最出色的自流酒液与压榨汁交融，静置逾24小时后被导入橡木桶。苹果酸乳酸发酵在橡木桶中自然完成。次年春季进行一次倒桶，后于12月装瓶前完成调配工作。
